How we vet every restaurant

We call ahead. We ask if there's a dedicated fryer, a separate prep area, and whether the kitchen understands cross-contact (not just "low gluten").

We say "celiac disease," not "gluten-free." It signals a medical need, not a diet preference, and kitchens tend to take it more seriously.

We ask about shared equipment. Fryers, griddles, toasters, and pasta water are the most common sources of accidental cross-contact.

We note it honestly here. If a place isn't 100% dedicated, we say so — you deserve to make the call for your own risk tolerance.
